
Mouthwatering and Melting Icicle Carnival Inspired Treats
After our adventure at the Icicle Carnival we really wanted to experiment with our own ice sculptures. We also thought a lot about where all the yummy herbs we’ve been enjoying all spring, summer and fall go for winter. You can still grown many indoors and like our friends in the story in a spa like greenhouse. But rather than give ours a spa treatment, we decided to freeze some.
You can freeze lovely designs with veggies, herbs and fruits. You can even add in cinnamon sticks. We made a lemon and mint snow cone which is just as tasty in cold weather as warm. We froze some of our favorite herbs to keep them fresh until we were ready to throw them in some vegetable soup. Be careful not to eat any google eyes! We used some special shaped ice molds but you can use regular ice cube trays. We also froze some treats for the birds and critters in our back yard. My son made frozen pumpkin crunch treats for our dogs with pumpkin purée, bits of chopped apple and some kibbles.

The goal here is to make your cubes as colorful as possible with fresh natural ingredients and experiment with different tastes.
We created a new vegetable soup to warm up when we were done with the mini ice sculptures. We always add a lot of oregano and basil into our vegetable soup. Sometimes we throw in some Rosemary. All of this is optional. You can experiment and add in the veggies and flavors you like.
Icicle Carnival Herb Soup:

Two containers of vegetable stock
Chopped Portobello mushrooms
Chopped Celery
Chopped Multicolored Carrots
Sliced Tomatoes
One can of spicy basil chopped tomatoes
Small bag of Frozen Peas
One can of Black Bean
One cup of Fresh Spinach
One Half chopped Garlic Clove
Teaspoon of Oregano
One full sprig of Rosemary
Handful of chopped Basil Leaves
(You can toss in your frozen herb cubes too!)

We like to have a small shell or other pasta on the side if anyone wants to add it in. We also sprinkle some grated fresh Parmesan cheese on top. Enjoy and remember to have fun making some ice Carnival warm and icy treats!
