
Bites of Fall
Remember when Sneaky the Squirrel said he loves the smells and tastes of fall? Well so do we so we created some recipes where you can enjoy both and have some giggles with some tiny pumpkin friends.
For our first recipe we rounded up some miniature pumpkins from the farmers market. We chopped their tops and scooped out their seeds. Now brush butter on their insides so it’s got a thin coating. Not too much, no more than half a teaspoon per pumpkin. Brush a tiny bit of olive oil on a baking sheet and place both the tops and bottoms on the pan. You bake these for about 45 minutes on 375 degrees. Keep a close eye that they don’t get too mushy. But they should be soft enough to eat.

Next you need to fill those pumpkins up with something yummy. We use a crockpot but you can make the filling on the stove in a big pot too. We cut up oyster and shiitake mushrooms, green, red, yellow and orange bell peppers and mix them all together with a pumpkin purée. Now sometimes you can find a pumpkin sauce you like. Another way to do it is use pumpkin purée and add your own ground cinnamon and clove spices. You can experiment with the mixture till it suits your tastebuds. You may also add browned beef or sausage to the mixture. We find it’s good with and without as the veggies do soak up the yummy pumpkin sauce quite well.
When those pumpkins come out of the oven you can add your mixture and put their tops back on to serve. If you’d rather go without the stuffing they make fancy soup and pasta bowls. We like to use black squid ink pasta around Halloween for some extra bewitching fun.
Now you need a yummy warm drink for those chilly nights. So get out some apples and add in your favorite hot chocolate or hot apple cider. We like to toss in nutmeg and some cloves with a cinnamon stick for the cider. We stick to marshmallows and a drizzle of caramel for the hot chocolate.
